Yesterday I felt like preparing a warm, cosy meal for Sophie using wild rice. Something filling and creamy but light at the same time.
Some people refer to wild rice as an aquatic grass, some as a grain. To me it’s a nutritious food, rich in fibre, anti oxidants, folate, phosphorous, manganese, zinc and magnesium.
It is rich in vitamin A, B2, B9, calcium, magnesium, potassium and zinc!
As with other grains and seeds, wild rice contains anti-nutrients. I recommend soaking the rice for at least 8 hours before cooking.
(for 1 person)
red wild rice (I measured using a dish)
a handful of frozen cauliflower
100g tender steam broccoli
2 cloves of garlic
1/2 tsp turmeric
Pink Himalayan salt
Pour water in a pan with a pinch of salt and bring it to boil. Add the rice and let it cook according to instructions (mine took 40 mins), adding more water if necessary.
In another pan, bring water to a boil and add the cauliflowers. Cook until soft and drain.
Aside, heat evo oil in a frying pan and add the turmeric and the the garlic.
When the garlic starts to soften add the anchovies and with the help of a fork let them melt into the oil. This will give the condiment a more intense flavour.
Add the broccoli and a few drops of water. Cover with the lid and cook for about 5 minutes.
Add the soft cauliflowers and mash them gently (at that point they’ll break easily) into the broccoli and anchovy condiment.
When the rice is ready and drained add it to the condiment mixing well on a high heat for a few seconds.
Serve hot and enjoy!
