Super Gooey Pumpkin Cookies

Some people are just romantic. Take Alan, my husband, he sees deep meanings in most things. Landscapes, seasons, are an example. ♥

I am more of a food person.

My mother often says to me that is typical of my astrological sign:

Taurus, practical and deeply connected to earth.

And what is more connected to earth than food?

The very essential gift from mother nature.

While the days are getting shorter and the trees turn to the warmest colour, I think: pumpkin cookies 🙂


So, with the help of my daughter Sophie, and after a few tests, which involved gobbling quite a bit of chocolate chips (we take food seriously).. we managed to put together this recipe. I remember washing out a kilner jar to accomodate the left over cookies, so Alan and Sophie could eat them at breakfast the next day, only to find out that it wasn’t needed. Cookies baked and gone in a few hours!

Don’t say I didn’t warn you.


2 cups of gluten free rolled oats

1 cup of pumpkin

1/4 cup coconut sugar


chocolate chips




Preheat the oven to 170°C

In a mixing bowl combine oats, pumpkin and coconut sugar and cinnamon and mix well

Add chocolate chips

Form small balls using your hands or use cookies stamps to give cute shapes to your dough

Bake for 12-14 minutes

Allow to cool and enoy
