Super Gooey Pumpkin Cookies

Some people are just romantic.  My husband, for example, he sees deep meanings in most things: landscapes, seasons, animals.. ♥

I am more of a food person.

My mother often says to me that is typical of my astrological sign:

Taurus, practical and deeply connected to earth.

And what is more connected to earth than food (perhaps she’s right..) 😉

and while the days are getting shorter and the trees turn to the warmest colour, I think pumpkin cookies 🙂

So, with the help of my daughter Sophie, and after a few experiments which involved gobbling quite a bit of chocolate chips (we take food seriously).. we managed to put together this recipe. After baking I got out a large Kilner jar to accomodate the left over cookies so Alan and Sophie could eat them at breakfast the next day..well, I just found out it wasn’t needed. Cookies baked and gone in a few hours!

Don’t say I didn’t warn you.


2 cups of gluten free rolled oats

1 cup of pumpkin puree

1/4 cup coconut sugar


chocolate chips




Preheat the oven to 170°C

In a mixing bowl combine oats, pumpkin and coconut sugar and cinnamon and mix well

Add chocolate chips

Form small balls using your hands or use cookies stamps to give cute shapes to your dough

Bake for 12-14 minutes

Allow to cool and enoy
