Dark Chocolate & Yogurt Cake

It’s my husband’s birthday.. he’s turning 40!

We are not the “big party” type of people. We have never been.  Maybe old style, but we still like to celebrate birthdays the three of us (well four with our Daisy Beagle girl) around the table, a cake, some wine and a present ♥

Me and my daughter have prepared for him this rich dark chocolate cake, moisten with coconut yogurt and softened with coconut butter.

Naturally free from gluten, dairy and grains.

We think it’s the perfect birthday cake 🙂 In fact, I might promote it to the “every occasion” cake.

the pre-decorated version

250 g dairy free plain yoghurt (I use coconut yoghurt)

130 g coconut sugar

3 eggs

75 g cacao powder

1/2 tsp bicarbonate of soda

100 g coconut butter (don’t keep it in the fridge, must be soft)

65 g coconut flour

1 1/2 tbsp potato starch

For the Icing

100 g dark chocolate bar

coconut butter (1 tbsp)

maple syrup (I  use 2 tbsp but you can add more if you have a sweet tooth)

Mix together the yoghurt with the coconut sugar

Add the eggs, cacao, the mix of coconut flour, potato starch and bicarbonate of soda

Add the coconut butter

Mix well to obtain a mousse like texture

Transfer to a pre-oiled cake tin and in the oven for about 25-30 min at 170°C

Check the cake and make sure it’s cooked in the centre before getting out of the oven

When the cake has cooled down prepare the icing by mixing the ingredients a bain mairie until melted

Let the icing cool down and spread it on top of the cake

Pop the cake in the fridge so the icing will set

Enjoy..This has gone so fast!!
