Raw Dehydrated Cacao Cashew Cookies

Possibly my favourite recipe. Maybe because I’m addicted to cacao, in most shapes or forms :)) although, raw is my favourite.

For this recipe I use my dehydrator, they come out really good and most importantly I can set the temperature quite low so the raw ingredients will keep their nutrients ♥ (Yum! My whole house now smells chocolatey!!)

The king of super foods (or the only ingredient second to oxygen!) is rich in antioxidants, it represents one of the highest food sources of magnesium, but it’s also rich in iron, potassium, calcium, zinc, copper, and manganese. Ingredients

2 cups unsalted cashews

1/2 cup cacao powder (better if raw)

1/4 cup raw honey

2 tbsp coconut butter

1/2 tsp vanilla

a pinch of salt

Method

In a blender combine all the ingredients and blend on high for a few seconds until smooth

Place the dough between two sheets of parchment paper and flat it down using a rolling pin

Using some cookie cutters to give shapes to your dough

Place the shaped cookies on a baking tray and into your dehydrator setting the temperature at 45°C for 48 hours
