My daughter made these cookies. She says they remind her of the chocolate chip cookies she had on our holiday in the US ♥ they taste awesome and with half the amount of the ingredients, free from gluten, grains and dairy ♥ Perfect.
1 cup tigernut flour –
[I grind my tigernuts and use them as and when needed, I find it more versatile → → Peeled Tiger Nuts ]
1/3 cup coconut butter [ this is my favourite→ Coconut Butter ]
1/4 cup maple syrup
1/2 tsp vanilla
a pinch of salt
Preheat the oven to 170 C
Mix the ingredients together until you form a nice sticky dough
Arrange on a baking pan lined with parchment paper. Press to form cookies
Bake for 15 minutes
Let them cool before dipping
Melt your favourite chocolate aside and dip only one half of the cookie
Refrigerate and Enjoy!
